So, I tweeted about this corn that I made last week. I even shared a bit of the process on Snapchat. It was so good I had to share. Alright, here's how I made the most delicious corn on the cob.
4 ears of corn - keep the husks on! 2 tablespoons of butter 2-3 tablespoons of fresh cilantro 2 tablespoons of chili powder a lime sea salt to taste
Preheat your oven to 350 degrees. I have a new(er) oven, so 350 is perfect. However, you could up this to 400 degrees if your oven is 10 years+ old.
Take the corn and place them on the lower rack of the oven. Keep the husks on. Yep. Keeps all the flavor in. Bake for 25-30 minutes. Remove from oven and place on cookie sheet. Pull husks down - but not off. (It makes them easier to eat in my opinion. However, you can get rid of the "husk hair" that is in the very inside of the husk. Spread butter on each ear of corn. I'm very generous with butter and unapologetic about it. Three things I strongly believe: 1. Jesus is real. 2. Beyonce is queen. 3. Butter is here to enjoy.
Then squeeze fresh lime juice on each corn. I use the juice from half of a lime on two corn. Then evenly sprinkle chili powder on the corn. Finely chop your cilantro and then also evenly sprinkle. It should look so pretty by now. Lightly salt each corn and then...you're done.
Yep. Don't even wait time, sis. Just bite into that corn and thank me as your emote with "Mmmmmmmm." You're welcome.
**This is also AMAZING on a grill - which I'm sure you cook on more during the summer :) Keep the husk on and grill for 20 minutes, 10 minutes for each side.
